I mean, you can do so much with them (think wedges, chip-shop worthy airfryer fries, and even my beloved potato farls). So I was thrilled to see that a new carb-based meal has entered the spudaverse: as of the time of writing, “swamp potato” recipes have taken over my social media timelines. It has all the ingredients of a classic, comforting potato dish.
